Easy banana muffins use the same batter as banana bread but bake in 20 minutes instead of an hour.   3. Fill the cups nearly full.
  4. Bake 18–22 minutes until golden and a toothpick is clean. Cool 5 minutes.

Foolproof tip: no ripe bananas? Bake unpeeled yellow bananas at 300°F for 15–20 minutes until the skins blacken — they’ll be soft and sweet enough to use right away.
