Easy Zucchini Bread (Moist, You Can’t Taste the Veggie)

How to make it
- Heat oven to 350°F (175°C); grease a 9×5 loaf pan. Grate 1½ cups zucchini (skin on); blot lightly if very wet.
- Whisk flour, both sugars, baking soda, baking powder, salt and cinnamon.
- Whisk oil, eggs and vanilla, stir in the zucchini, then add to the dry just until combined.
- Bake 50–60 minutes until a toothpick is clean. Cool 15 minutes.
Foolproof tip: grate on the large holes, not small — bigger shreds melt in better and keep the bread moist, while finely grated zucchini can make it dense.

- Whisk the flour, both sugars, baking soda, baking powder, salt and cinnamon.
- In another bowl whisk the oil, eggs and vanilla, then stir in the grated zucchini. Add the wet to the dry and stir just until combined.
- Pour into the loaf pan and bake 50-60 minutes, until a toothpick comes out clean. Cool in the pan 15 minutes.
