How to make it

  1. Heat oven to 350°F (175°C); grease a 9×5 loaf pan. Grate 1½ cups zucchini (skin on); blot lightly if very wet.
  2. Whisk flour, both sugars, baking soda, baking powder, salt and cinnamon.
  3. Whisk oil, eggs and vanilla, stir in the zucchini, then add to the dry just until combined.
  4. Bake 50–60 minutes until a toothpick is clean. Cool 15 minutes.

Foolproof tip: grate on the large holes, not small — bigger shreds melt in better and keep the bread moist, while finely grated zucchini can make it dense.

  3. In another bowl whisk the oil, eggs and vanilla, then stir in the grated zucchini. Add the wet to the dry and stir just until combined.
  4. Pour into the loaf pan and bake 50-60 minutes, until a toothpick comes out clean. Cool in the pan 15 minutes.
