Easy Chocolate Cupcakes (Moist, One Bowl)

The best easy chocolate cupcakes use the same trick as great chocolate cake — hot coffee or water stirred in to bloom the cocoa for deep flavor and a moist crumb. One bowl, no mixer, and a thin batter that bakes into rich, tender cupcakes ready for any frosting. Don’t be alarmed by the runny batter; it’s the secret.
The Quick Version
- Hot coffee or water blooms the cocoa for deep flavor.
- Thin batter is correct — it makes them moist.
- One bowl, no mixer.
- Fill liners ⅔ full and cool fully before frosting.
How to make them
- Heat oven to 350°F (175°C); line a 12-cup tin. Whisk flour, sugar, cocoa, baking soda, baking powder and salt.
- Whisk in egg, milk, oil and vanilla until smooth.
- Stir in ½ cup hot coffee or boiling water; fill liners ⅔ full.
- Bake 16–19 minutes until a toothpick is clean. Cool before frosting.
Foolproof tip: top these with our chocolate buttercream or vanilla buttercream once fully cooled.
Frequently asked questions
Why is my batter thin?
That’s correct — the hot liquid makes it runny and that’s what keeps the cupcakes moist. Don’t add flour.
Can I use coffee?
Yes — it deepens the chocolate flavor without tasting like coffee. Boiling water works the same for texture.
What frosting is best?
Chocolate buttercream is classic; vanilla, cream cheese, peanut butter or ganache all work.
