Classic pound cake is all about the butter — softened butter and sugar creamed until fluffy, with room-temperature eggs and milk for a fine, tender crumb. Unlike the one-bowl oil cakes, this one rewards a few minutes with the mixer. The payoff is a buttery, golden-crusted cake that’s perfect plain, with berries, or lightly toasted.

How to make it

  1. Heat oven to 325°F (165°C); grease a loaf or bundt pan. Cream 1 cup softened butter with 1½ cups sugar for 4–5 minutes until fluffy.
  2. Beat in 4 eggs one at a time, then vanilla.
  3. Add flour, baking powder and salt alternately with ½ cup milk, mixing just until smooth.
  4. Bake 60–75 minutes until a toothpick is clean. Cool 15 minutes, then turn out.

Foolproof tip: truly soft (not melted) butter is essential — press it and it should dent easily. Cold butter won’t cream and the cake will be heavy.
