How to make them
- Heat oven to 350°F (175°C); line an 8×8 pan. Make the brownie batter: whisk butter + 1 cup sugar, then 2 eggs and vanilla until glossy; stir in cocoa, flour, salt.
- Beat cream cheese with ¼ cup sugar, 1 egg yolk and vanilla until smooth.
- Spread most of the brownie batter, dollop the cream cheese on top, drop spoonfuls of reserved batter, and marble with a knife.
- Bake 28–32 minutes until just set. Cool, then chill 1 hour.
