Magic Bars (7-Layer Bars, No Mixing Bowl)

Magic bars are the easiest bar there is — you layer everything right in the pan and pour sweetened condensed milk over the top, no mixing bowl required. Also called seven-layer bars or Hello Dolly bars, they stack a graham crust with chocolate, coconut and nuts, and the condensed milk bakes into a gooey caramel that holds it all together.
The Quick Version
- No mixing bowl — everything layers straight in the pan.
- Press the crust firmly so the bars hold their shape.
- Pour the condensed milk evenly, don’t stir — it’s the glue.
- Cool and chill before cutting or they’ll crumble.
How to make them
- Heat oven to 350°F (175°C); line a 9×9 pan. Stir graham crumbs with melted butter and press firmly into the pan.
- Layer on the chocolate chips, butterscotch chips, coconut and nuts.
- Pour the can of sweetened condensed milk evenly over everything — don’t stir.
- Bake 25–28 minutes until golden and the coconut is toasted. Cool, then chill before cutting.
Foolproof tip: press the graham crust hard with the bottom of a measuring cup — a firmly packed crust is the difference between neat bars and a crumbly mess.
Frequently asked questions
What are the seven layers?
Graham crumbs, butter, chocolate chips, butterscotch chips, coconut, nuts, and sweetened condensed milk. Swap layers freely.
Why won’t my bars hold together?
They need to cool and chill completely — the condensed milk only sets as it cools. Cutting them warm makes them fall apart.
Do they need refrigerating?
They keep a few days at room temperature; refrigerating makes them firmer and easier to cut, and they freeze up to 3 months.
